I'd never seen this before. Roots Farm, which had its vendor table set up near the Cota St entrance of the Saturday morning market, always had an interesting selection of produce and they usually are good about explaining what the items are, and how best to use them.
This puntarella is mainly sought after for its tender flower bud core, which is eaten raw and crunchy. They recommended taking that core piece out and refreshing it in icy cold water, then sliced and eaten.
The outer leaves can be sauteed like regular greens. I'm looking forward to giving them a try.
